Chocolate Chip Cookie
1/2 cup butter
3/4 cup peanut butter
1 cup white rice flour
1/4 cup tapioca flour
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/2 tsp. baking soda
1/2 tsp. baking powder
1 bag milk chocolate chips
In a large bowl cream together butter and peanut butter. Mix well with electric mixer. Add flour, sugar, brown sugar, egg, baking soda, and baking powder. Mix thoroughly. Add chocolate chips and mix by hand. Shape cookie dough into 1 inch balls. Press down with a fork and make criss cross pattern. Bake on center rake at 375° for 6-8 minutes or until lightly brown. Place cookies on cooling rack until cool.
