Extra Soft Sugar Cookie
4 cups flour
1 tsp. baking soda
1 tsp. salt
Cream ingredients together below, than add ingredients above:
1 cup butter
1 tsp. vanilla
2 cups sugar
2 eggs
1 cup sour cream
Add remaining ingredients and mix well. Spread flour onto counter or were you will be rolling the dough. Roll dough out to about 1/4 inch thick. Cut dough with cookie cutter. Place on greased cookie sheet. Bake in 350° oven on center rack for 10 to 12 minutes or until lightly browned. Dip cookies in powdered sugar or add frosting.
Snickerdoodles
1 cup butter
1 1/2 cup sugar
2 eggs
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. soda
1/2 tsp. salt
Mix butter, sugar and eggs thoroughly. Blend all dry ingredients and stir into mixture. Roll into balls the size of walnuts. Roll balls in mixture of 2 tablespoons sugar and 2 teaspoons of cinnamon. Place 2 inches apart on ungreased cookie sheet. Preheat oven to 400° and bake for 8 to 10 minutes. These cookies puff up at first, then flatten. Makes 5 dozen 2 inch cookies.
Melanie's Snickerdoodles
2 cups butter
3 cups brown sugar
4 eggs
6 cups flour
4 tsp. cream of tartar
2 tsp. baking soda
1/2 tsp. salt
Cream together butter and brown sugar, then add eggs. Add flour, cream of tartar, baking soda and salt. Roll into balls. Roll balls in cinnamon and sugar. Place on ungreased cookie sheet. Bake at 400° on center oven rack for 8 to 10 minutes or until lightly brown.
Mexican Wedding Cookie
1/2 cup powdered sugar
1 cup butter
1 tsp. vanilla
2 1/4 cups flour
1/4 tsp. salt
3/4 cup finely chopped nuts
Mix butter, sugar and vanilla well. Work in flour, salt and nuts till dough holds together. Make into 1 inch balls. Place on ungreased cookie sheet. Bake on center rack of 400° oven for 10 to 12 minutes or until set, but not brown. While still warm roll in powdered sugar. When cool, roll them again if desired.
Raisin Filled Sugar Cookie
Filling:
2 cups ground raisins
1 tbsp. flour
1 cup sugar
1 tsp. vanilla
1 cup water
1 cup chopped nuts
Mix ingredients. Heat and stir until it starts to bubble. Set it aside.
Cookie Dough:
2 cups butter
2 cups sugar
1 cup brown sugar
4 eggs
2 tsp. vanilla
6 cups flour
2 tsp. baking soda
1 tsp. salt
Cream together butter, sugar, brown sugar and eggs. Add vanilla, flour, baking soda and salt. Mix well. Roll out flat to about 1/4 inch thick on counter covered with flour. Cut out with 2 inch round cookie cutter. Place on ungreased cookie sheet. Add about 1 heaping tsp. of filling in the center of each round. Place another round on top and press together. Sprinkle tops with sugar. Bake on center oven rack at 350° for 8 to 10 minutes.
Mom's Sugar Cookie
1 cup oil
1 cup butter
1 cup sugar
1 cup powdered sugar
2 eggs
1 tsp. Vanilla
4 cups & 3 tbsp. flour
1 tsp cream of tartar
1 tsp. baking soda
pinch of salt
Cream together oil, butter, sugar and brown sugar together, then add eggs, flour, cream of tartar, baking soda and vanilla. Mix ingredients thoroughly. Chill in refrigerator for 30 minutes, then take out and roll into 1 inch balls. Roll balls in sugar and place on ungreased cookie sheet. Bake at 350° for 8 to 12 minutes or until lightly brown on center oven rack.
Boiled Raisin Sugar Cookie
1 1/2 cups raisins
1 cup water
Bring mixture to a boil then let simmer until water is almost all absorbed. About 10 to 12 minutes.

1 cup butter
3 beaten eggs
2 tsp. vanilla
3 cups flour
1 tsp. baking soda
1 tsp. salt
Cream sugar, butter, eggs and vanilla together, then add flour, baking soda and salt. Add cooled raisin mixture to other ingredients. Place into refrigerator and chill dough. Roll dough into balls and drop them into a mixture of 1/2 cup sugar and 1/2 tsp. cinnamon. Place balls on ungreased cookie sheet. Bake at 375° for 10 to 12 minutes or until lightly brown on center rack.
